80 to freezing!!!




Okay....the morning started off as usual...and as it kept on snowing I knew we had to go and play. 3 1/2 hours later we finally just came inside to eat lunch and take a nap. Jaxon had so much fun! This was the first time he has ever played in snow. He had to have 3 wardrobe changes in that amount of time because he was soaking wet and frozen!! We got to meet lots of neighbors who were outside playing and "daddy" even got to come home early and have a snowball fight with us. So much fun!! Jaxon walked around saying "snow"!!!

Valentines Day

Since Valentines Day was on a Sunday this year, my friend Jenna had the idea to put Jaxon down at their place and we could make the guys a really nice dinner and eat when all of the kids went to sleep.  I wish I would have taken a picture of the food.  We made lamb, red potatoes, green beans, and rolls.  It all turned out sooo good.  Jenna made a "ice cream" cake for dessert and Mark made oreo balls.  We got stuffed but it was a lovely evening followed by watching 50 first dates(which was Mark and I's first date!).

Best Birthday ever!



The last couple of years I do not really get excited about my birthday coming up but then end up having such a wonderful weekend...and yes I say weekend because it always ends up being a birthday extravaganza. As much as I would like to say that we never have to do anything for it, I am always pleasantly surprised by how sweet and loving everyone is to me. My Birthday was Friday and when Mark came home from work Thurday it already begain. He walked through the door with flowers and told me he was taking the next day off.........so I got to: sleep in:) wake up to breakfast made(yummy french toast), went to olive garden with my dear sweet mother for lunch, went shopping (by myself:)), and headed to cheesecake factory and games for dinner!! Then on Saturday my wonderful girlfriends all got together and took me out to lunch followed by family dinner at my sister's that my mom made. So of course it was not good for the diet as it turned out to be a weekend full of eating...but it was wonderful. Thanks everyone!!!

Perfect for a rainy day....

My favorite White Chicken Chili Recipe:

  • white chili chicken
  • 1 lb boneless skinless chicken breast, cut into 1/2 inch cubes
  • 1 medium onion
  • 1 1/2 teaspoons garlic powder
  • 1 tablespoon vegetable oil
  • 2 (15 1/2 ounce) cans great dry northern white beans, rinsed and drained
  • 1 (14 1/2 ounce) can chicken broth
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream
  • 1/2 cup whipping cream
  • 2 (4 ounce) cans diced green chilis
  • 1 can white corn
  • In large saucepan, saute chicken, onion and garlic powder in oil til chicken is no longer pink.
  • Add beans, chilies and seasonings and chicken broth.
  • Bring to a boil.
  • Reduce heat and simmer (uncovered) for 30 minutes.
  • Remove from heat, stir in sour cream and whipping cream.
  • Serve immediately.

But no...I didn't make it.  However, that is a goal of mine.  I want to go take a couple of cake decorating classes and start doing it for fun.  Mark has gotten me a few things that I will need to get started, so here we go:)  Wish me luck!

Lazy

I swear I make this recipe at least once every two weeks because Mark and I love to eat breakfast for dinner.  When I looked to find a belgian waffle recipe all of them wanted me to peak egg whites(which I hate doing) except this one.  It turns out I liked this recipe better than most of the other anyway.  Our favorite things to eat with it are nutella or whip cream and strawberries but obviously you can "have whatever you like"!!

Belgian Waffles
 2 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 1/4 cups milk
6 tablespoons vegetable oil
2 large eggs
Directions
  1. Place all ingredients in a large mixing bowl and combine until well blended.
  2. Allow batter to rest 5 minutes before using.
  3. Use in your Belgian Waffle Maker according to manufacturer's suggestion.

Congratulations Binky!

 My awesome husband who decided to block for Taylor so that she would have a sure win at the bouquet...sure enough it worked:)








Jaxon did pretty well all things considered, but thanks to my sweet brother and sister-in-law, Jaxon was able to skip out early on the festivities to sleep in his crib once he was DONE.
  
 
And there she is folks...Taken.  She got married in the San Antonio Temple.  Many of us were able to be there for the ceremony and it was beautiful.  Of course I bawled like a baby because my Baby sister was getting married.  I know I got married when I was just a few months older than her, but somehow it just seems different when the baby of the family gets married I guess. 
We were able to have a lovely reception afterwards at the J.  Of course I am a dummy and didn't take hardly any pictures but our good family friend Ginny was able to catch many beautiful moments with her photography.

I love these girls.  I can honestly say in a way they saved my life.  We have been there for each other through the good and the bad and always will.
